We've always been huge fans of guacamole... I mean, who isn't? We've also really been in to making our own salsa in the summertime. One summer, Brian made so much homemade salsa.. like, SO MUCH.
I know I've mentioned before our new-ish Mexican cookbook by Rick Bayless, Mexican Everyday. We've tried so many of his salsa recipes and they have all been super spicy. We tried the one above a few weeks ago and it fit the bill. This stuff is good! A kick but not too much... so, so delish and very earthy. And the guac.. so simple but SO perfect. Like really.. go buy yourself a fancy mortal and pestle (cause it's more fun) and make this ASAP.
SALSA
Ingredients:

3 garlic cloves, peeled
4 medium tomatillos, husked, rinsed and cut in half
2 canned chipotle chilies in adobo
salt
Instructions:
Set a large nonstick skilley over medium-high heat. Lay in the garlic and tomatillos (cut side down). When the tomatillos are well browned, 3 or 4 minutes, turn everything over and brown the other side. The tomatillos should be completely soft.
Scoop the garlic and tomatillos into a blender jar or fodo processor, along with the chilies and 1/4 cup water. Process to a coarse puree. Put into a salsa dish and cool.
GUAC
Ingredients:
2 large avocados
1 clove garlic, smashed
1/4 cup picked cilanto
1/2 lime
salt
Mix and combine!
