I might have mentioned in a post a few days ago how frustrating making lunches for Kate has been. I actually kind of enjoy the meal planning and preparation, it's the watching her refuse the labor of love that is the trying part.
The recipe called for a pesto-- well, we attend a nut free facility and while I doubt they would ever know, I got in trouble for nuts at our last daycare so I wouldn't dare try anything! So I went to my girl, Gina of Skinnytaste. I know I like her pesto recipe. So I made my pesto, made my marinara, used the good salami (figured I would get the leftovers, there weren't any!!!) and a blend of Italian cheeses. I went light on the cheese. Rolled the dough, cut into about 12 pieces and stuck them in greased muffin tins. Baked for about 10 minutes?? I honestly don't remember on 350 and ta-da!!
I used the ends that weren't pretty and made little minis in mini muffin tins for me to try. YALL. These are so good. And if she refuses them forever, I will end up eating every single last one of them.
So I don't really have a "recipe," but if you follow the above, using the pesto recipe below.. you can do it! And shoot me an email (or text) if you have any questions, I can try to write all this down next time :)
Skinny Pesto Recipe
INGREDIENTS:
1 cup basil - I subbed Spinach
1 clove garlic- I used a little less
1/4 cup grated Parmesan
salt & pepper to taste
2 1/2 tbsp olive oil- I used a little less
DIRECTIONS:
In a food processor pulse basil, garlic, parmesan cheese, salt and pepper until smooth.
Slowly add the olive oil while pulsing.
Store in a sealed container and refrigerate until ready to use or you can freeze this in ziplocks bags to use at a later date.
