Alex's Chicken Salad Recipe

I've always been a really big fan of chicken salad. I've had it all different ways. Been through many different phases- plain, with grapes and apples, add some nuts, etc, etc. But this latest recipe has been my fav for quite some time now and I developed it with a little help from Brian. 

One of my favorite memories from college was when my bff Jennifer came and lived with me for a summer. We went to Kroger one day because we wanted to make chicken noodle soup. Went to grab a rotisserie chicken and they had them marked 3 for $10. So we bought three. I still have NO IDEA why. We got home and were like what are we going to do with all this chicken! We make this joke to this day. I know it's a "you-had-to-be-there" thing but it was so funny to us. We made soup and chicken salad. And probably something else too. I honestly don't remember now! 

Fast forward to last fall. Brian was smoking some ribs maybe and we had a lot of leftover chicken breasts, so we threw them all on the grill and they were so wonderful. We had so many that I took some, shredded them and made a batch of chicken salad. Something about the smoke made it so much better than like... ever. 

Ingredients:
1-2 rotisserie chickens (preferably smoked)
mayo - more
mustard - less
salt + pepper
diced celery
relish
boiled eggs
lemon juice

I have never measured-- all to your liking. Mix and serve!
