Toddler Recipe: Blueberry Donuts

If you've been around for even a minute, you've probably learned that my oldest loves to bake with mama! We usually do this on the weekends during little sisters morning nap. Hanging on to that nap as long as we can!! 

This past weekend, Kate was super excited to bake because I ordered her a new DONUT PAN! It was so fun! I'm sure you could make so many things in this pan but we picked a recipe that was suppose to be made as muffins but cooked in this instead! Just adjust the timing if you go the same route. 


Muffins (Made as Donuts)
Ingredients:
1C dry oats
1 ripe banana
1/4C greek yogurt
1 egg ( we subbed another banana because of egg allergy)
3T maple syrup
1/2t vanilla extract
1t baking powder
1t baking soda
1/4t salt
1/2C blueberries, roughly chopped
1t orange zest

Instructions: 
Preheat oven to 350. Spray or line pan. 

In blender, add in the oats, banana, yogurt, egg, syrup and vanilla. Blend for 20 seconds on low, scrape down the sides of the blender. Blend on high for 1-2 minutes or until all of the oats are completely broken down. 

Add in baking powder, baking soda and salt. Blend on low for 20 seconds. Add in blueberries and orange zest and mix by hand with a spoon. (I actually dropped in the blueberries to the pan-- we made a few different kinds- some chocolate chip, blueberries and sprinkles.)
