In my latest installment of Everything-Kate-Eats-Is-A-Carb... I bring you fruit + veggie(ish) mini pancakes. Like so many of my other recipes this color, these were super easy and quick to make. And they get a YUMMMMMY from Kate.
These are actually made from baby cereal, which I still had an unopened box. I think I'll just use oats in the future. Again, easy.. freezable and very kid approved. Sometimes I just warm them up in the microwave and sometimes I pop in the toaster.
And disregard the semi burnt looking ones at the bottom. Kate insists on cooking with me.. and you know, sometimes I get distracted and don't flip in time. Rest assured that she still ate it and it tasted fine ;)
Baby Cereal Pancakes
1 egg
1 cup whole wheat flour
½ cup baby cereal or oatmeal
1 tablespoon oil
2 teaspoons brown sugar
1 ½ teaspoons baking powder
1 teaspoon cinnamon
1 cap full of vanilla
1 4oz baby puree—any fruit or veggie
3/4 cup 100% juice—I used apple
Add water, if needed, until desired consistency
Mix all together and cook.
