Green Goddess Chicken.. as I'm calling it, was so fantastic! I'm adding this to the rotation forever because it was so quick and so easy! And GOOD! And I think healthy. Had to be healthy.
We love the ranch seasoning mix around here. Usually for ranch dip with veggies. We've been mixing it with greek yogurt and it's just as good. So this night, I took a packet, covered my thin chicken breasts with it and then cooked in 1T butter + 1T oil. Served it over basmati rice, usually I cook in some kind of broth. Then made a little dippy (as Emmy calls it) with a 1C greek yogurt cup and some Trader Joe's Green Goddess seasoning. It was SO yum! Light and fresh even though it wasn't straight from the garden? And then I paired it with stewed radishes because I love radish and it's so beautiful! Simple and easy weeknight meal. Try it! XOXO
