Oven Roasted Veggies

We've been on a real HOME CHEF kick lately! Last week we one of the taco meals but knew we needed a little something extra. I wanted something easy so Brian grabbed zucchini. We had no idea what to do with it. 

So I googled and came up with a super quick, easy and delish way to cook it. We had some cherry tomatoes so I threw those in for a little extra. 

Cut in rounds, top with EVOO, salt and pepper then add some fresh shaved parm on the top. Cook on 475 for 5 minutes, then broil for 2. Enjoy!
