When we honeymooned in Jamaica, we became big fans of the Appleton Estates Jamaican Rum. Every time we go to the liquor store and see if we talk about how great it was and the memories attached, and uh.. the jingle we made up about it and still sing.
Fast forward to May of this year- we went to the lake with Erin and Jared for a weekend and they had a bottle. Jared made some fun cocktails for us and next thing we know, we have a bottle in our house.
Brian used his super awesome ULTIMATE BAR BOOK to make us some awesome cocktails. I'm rounding up my favorites below. Enjoy!
Classic Daiquiri
2 oz rum
1 oz fresh lime juice
1/2 oz simple syrup
lime slice
Shake the liquid ingredients vigorously with ice. Strain into a chilled cocktail glass. Garnish with lime slice.
I think this is the classic but with orange in the place of lime. If I'm wrong, I hope my husband reads this and corrects me.
Scorpion (left)
2 oz rum
1/2 oz brandy
1/2 oz dry vermouth
1 1/2 oz fresh orange juice
1 1/2 oz lemon juice
1/2 oz orgeat syrup
maraschino cherry
edible flower
Shake liquid ingredients vigorously with ice. Strain into a large ice-filled wine glass. Garnish with the cherry and float the flower on top.
Rum Swizzle (right)
2 oz rum
1/2 oz fresh lemon juice
1/2 oz tripel sec
5-6 oz chilled ginger ale
lemon wheel
Shake the rum, lemon juice, and triple sec vigorously with ice. Strain into an ice-filled collins glass. Top with ginger ale. Garnish with lemon wheel.
