We started making homemade caesar dressing a few months back and now we can't stop. It's so good. And the salad just makes the perfect, delicious meal. I finally watched Brian every step of the way so I could blog the recipe. Usually I'm in the chicken cook so I never really knew what was going on! We even took step-by-step pictures.
RECIPE
Ingredients:
2 garlic cloves
4 anchovy fillets
salt
pepper
1T lemon juice
1t dijon mustard
1 egg yolk
1/4C neutral oil
1/4C olive oil
baby romaine
Parmesan cheese
croutons
Instructions:
Cook chicken. We use a little salt and pepper and cook in olive oil.
Combine garlic, anchovy and a pinch of salt in a mortal and pestle to create a paste.
Combine paste in large bowl with lemon juice and mustard. Whisk. Add egg yolk and stir to combine. Fresh ground black pepper to taste.
Slowly combine oil while stirring constantly, little drops at a time. Combine dressing with salad. Top with chicken, grated or shaved Parmesan cheese and croutons.
First step-- anchovy, salt and garlic in mortar and pestle.
Pause to start cooking the chicken. Brian did some research on cookware and we've been replacing our old cookware, this pan is awesome! The brand is Tramontina and we've bought a few pieces lately. The price is really good right now, so if you're in the market.. get some!
