Smoked Salmon + Endives

I really loved these and so did Brian. He's actually asked for them again since we had them only two weeks ago! I actually found the recipe a while back and had been wanting to try them. I stumbled on some endives at trader joe's the other day and the rest is tasty history. 

The vinaigrette really made the entire thing. It was really delish. Very fresh and light. Perfect little summer app! 

2T fresh lemon juice
2T minced shallots
2T chopped fresh dill, plus more for garnish
1t Dijon mustard
salt + pepper to taste
24 Belgian endive spears
6-8 oz. smoked salmon

Make the vinaigrette: in a small bowl, whisk the lemon juice, shallots, dill (And mustard, if using). Slowly add the olive oil, whisking constantly. Season with salt and pepper. 

Just before serving, arrange the endive spears on a platter and lay a strip of smoked salmon on each one. Drizzle with vinaigrette and garnish with dill leaves and lemon wedges.
