Hello summer in a bowl! My goodness. I picked this to make on the first day of spring because the weather was so perfect this weekend. I think this is going to be on repeat until fall. It was super simple and so dang delicious.

We had a lovely weekend-- spending most of it outside. I FINALLY talked Brian into us buying an outdoor sectional. It's already proved to be a hit after spending all day Saturday and Sunday on it. Here's hoping for a fantastic spring and summer!

Spicy Salmon Poke-ish

Last week we bought salmon for a weekend meal and when it came down to it, didn't really want to cook it the way we originally planned. So we changed course and adapted a tuna poke recipe for the salmon. It turned out great. We just ended up cooking the salmon a little before plating but followed the rest to perfection!

I haven't met a taco that I didn't like. This almost felt more like a quesadilla because of the cookery. Which might be why I ultimately liked it even more. The chicken had great flavor and we even took the leftovers and made rice bowls with it the next day. Bon appetit!
Weekend in Wynne + Memphis Zoo

We went to Wynne last month for Brain's grandparents 65th wedding anniversary! I was talking to a friend the day before and she just threw out the idea of us coming a day early and hitting the Memphis Zoo-- so we did! And I'm so glad we did. I hate COVID and I hate how it's kept us from really living and enjoying our friends-- and our friends kids! So it was wonderful and so great to spend time with our friends again.
Galentine's Day Date
