I loved this! Actually found it on instagram from Ralston rice. Which I love and have finally found in Fresh Market. I hear that Kroger has it as well. It was delish and perfect for a cold evening at home.
Ingredients
6C chicken broth
1/2C rinsed Ralston Family Farm's golden rice
3 eggs
2 lemons, juiced
2C cooked shredded chicken
salt and pepper to taste
fresh parsley or dill for garnish, optional
Instructions
Cook the rice. In a large pot, bring the chicken broth to a boil. Add the rice and reduce the heat to a simmer and cook until tender.
Prepare the egg-lemon mixture. In a bowl, whisk together the eggs and lemon juice until smooth.
Temper the eggs. Slowly ladle 1 cup of hot broth into the egg-lemon mixture, whisking constantly. This prevents the eggs from scrambling.
Combine. Gradually stir in the tempered egg-lemon mixture back into the pot of soup. Stir well, and heat gently (do not boil) until the soup thickens.
Add chicken. Optional- for a heartier version.
Season and serve! Season with salt and pepper to taste. Drizzle with EVOO and garnish with fresh parsley or dill.
