Grilled Pesto Salmon + Veggies

YUM. We are officially back on the salmon wagon. We hop on and off and every time we get off, we never know why it's been so long! This recipe is adapted from a super old one that I KIND OF made up. I guarantee you we will be incorporating this in the mix a lot over the summer! It's so fresh, light and packed full of flavor. 
Really all we did was make a simple pesto (recipe below) and rubbed it allll over the salmon. Cooked on them on cedar planks and grilled a basket of whatever veggies we had in the fridge. Tossed with salt, pepper and olive oil, of course!

Basil Pesto

1 cup basil
1 clove garlic
1/4 cup grated parmesan
salt & pepper to taste
2 1/2 tbsp olive oil

In a food processor pulse basil, garlic, parmesan cheese, salt and pepper until smooth. Slowly add the olive oil while pulsing.
